Where does your name come from?
Our name comes from our family dog, Atticus. We found him abandoned and alone in a trailer park, covered in dirt and hadn't eaten in a few days. We decided to take him home with us and he quickly became a part of our family.
How do i brew the perfect cup?
The answer to this depends on what you're using to make your coffee, however, good quality water is crucial to a good cup of coffee, so if your tap water isn’t fantastic, use filtered.
Drip Coffee Maker
Grind: Medium
Water Temp: 195-205F
Brew Time: Dependent on your coffee maker
Use 1 tablespoon of ground coffee for every 6-8 ounces of water at 195F - 205F. For the technical minded that’s 12 grams of coffee and 200 grams of water. Adjust to meet your flavor preferences
French Press
Grind: Course
Water Temp: 205F
Brew Time: 8 minutes
Pour Over
Grind: Medium Fine
Water Temp: 195-205F
Brew Time: 3 minutes 30 seconds

French Press
Grind: Course
Water Temp: 205F
Brew Time: 8 minutes
- Bring 400 grams or 14 oz of water to 205F
- Put course ground coffee into the French Press and shake to level
- When the water reaches temperature pour over the coffee grounds and set a timer for 8 minutes
- Wait 30-45 seconds and then gently stir the grounds for 15 to 20 seconds
- Place the lid on the press and just make contact with the coffee, but don’t press yet
- When the timer sounds, gently press as not to over agitate the coffee. Press to the bottom.
- Serve immediately or transfer to a clean carafe. Don’t allow the coffee to sit on the grounds.
Pour Over
Grind: Medium Fine
Water Temp: 195-205F
Brew Time: 3 minutes 30 seconds
- Bring 400 grams or 14 oz of water to 195F-205F
- When water comes to temperature, wet the filter with 50-60 grams of water then discard the water.
- Fill the filter with medium fine ground coffee
- Bloom coffee with 60 grams of hot water over 20 seconds
- Let the coffee bloom for another 25 -30 seconds
- Slowly pour water in the center of the grounds for the next 2 minutes
- Allow the coffee to draw down over the next 60 seconds

Who are the dogs on your bags of coffee?
Atticus is the loving pup on our classic Medium Roast and the face of our brand. Rory is the face of Rory's Darkness Roast, and she is our family's German Shepherd. Winston is the face of Winston's Breakfast Roast and is our daughters first dog, whom she adopted from NOCO Humane Society.
